I took a short trip to Hong Kong in March. I was literally there for four days, but left feeling like a I had a great experience of it. From markets to the antique street, expensive Japanese to super cheap local noodles (my favorite meal there), from temples to bars. We packed everything we could into the very short visit.
Two things I would recommend:
Ask someone local where to get the best noodles, do not look in a tourist guide. We asked our concierge where HE would go, and found the most delicious tiny noodle shop where the two of us ate for 7 dollars total. For those of you going to Hong Kong, I recommend going there - (see http://www.everywheremag.com/places/5143).
And, skip the tourist bars! Instead go to where the local Chinese young crowd hang out, and you will find super chill bars, where each table is set up for dice drinking games and the bartenders hang out with you, teach you the games and sing very sappy karaoke! Loads of fun.
