This is an article describing the flatbread that is central to Uzbek cuisine and culture- "non."

Central Asian flatbread, called "non" is at the center of ever meal in Uzbekistan. It is usualy bought daily, in the morning, so the bakeries start preparing is well before dawn.
A baker in Bukhara cooks the local bread, called "non" by slapping it onto the sides of a conical oven. This method of baking has remained more or less unchanged since the time of Alexander the Great.
After meeting in the Kokand city park, an English speaking woman invited us to her home for an impromptu feast.
