Photo: Whale Carpaccio with Fried Capers

Intensly dark meat, but not very flavourful. More than anything it was the texture -- slightly slippery -- that was of interest. As with almost all the ingredients here at På Høyden, the whale was caught and filleted just outside of Bergen.
