The Golden Gate Fortune Cookie Factory has been making fortune cookies the "old fashioned" way since 1962. Each cookie is baked in its own iron. The batter is measured into the iron as the rotary rank of irons moves to the left. The lid covers the batter and the cookie bakes, emerging on the right ready to be plucked out by quick fingers. The worker folds the hot, plyable cookie around the paper fortune. If this doesn't happen fast enough you will soon have a bucket of wannabees, as in the photo. With or without a fortune inside, they're tasty, crunchy treats. Please, don't leave Chinatown without yours.
